3 Bean Salad

This is a super simple and tasty salad great for summer evening meals on the patio. Feel free to add more types of beans that suit your tastes.

Ingredients
Red Kidney Beans x 2 regular sized cans (washed) or 2 cups fresh cooked
Chick Peas (Garbanzo Beans) x 2 regular sized cans (washed) or 2 cups fresh cooked
Black Beans x 2 regular sized cans (washed) or 2 cups fresh cooked
Mayonnaise x 1/2 cup

Garlic 2-3 cloves (crushed)
Lemon x 1 (squeezed)
Salt and Pepper to taste

Additional, optional ingredients
Red Onion finely chopped
Basil
Parsley
Chives
Any color peppers (capsicum) finely chopped
Edamame
Red Cabbage finely sliced
Cherry tomatoes chopped
Etc.

Instructions
If using canned beans make sure to wash and strain them. If using dried beans they need to be cooked until tender.
PlaceĀ all the beans, mayonnaise, crushed garlic and lemon juice into a large bowl and mixed with a wooden spoon until the beans are coated with a line coating of mayonnaise, lemon juice and garlic. Add salt and pepper to taste.

Refrigerate and serve cold.
