Creamy Tomato Basil Soup

Yeah, you can always go to the store and open can or pouch of soup, but it is never the same as home-made soup. Plus they are usually loaded with preservatives and other junk you really don’t need in your body.

This is a simple soup that my 10 year asked for so we made it together and it turned out great.

Serves: 2 – 3

Ingredients
5 large tomatoes (Chopped)
1 large onion (finely chopped)

3 Bean Salad

This is a super simple and tasty salad great for summer evening meals on the patio. Feel free to add more types of beans that suit your tastes.

Ingredients
Red Kidney Beans x 2 regular sized cans (washed) or 2 cups fresh cooked
Chick Peas (Garbanzo Beans) x 2 regular sized cans (washed) or 2 cups fresh cooked
Black Beans x 2 regular sized cans (washed) or 2 cups fresh cooked
Mayonnaise x 1/2 cup

Delicious Granola

Super easy, healthy and delicious.

I was fortunate enough to have parents that were concerned about feeding our family overly processed foods. Bottom line was that I basically grow up on this stuff. This recipe is slightly tweaked from how my Mum use to make it but the great thing about this recipe is that you can change it up to suit your tastes.

PS: In Australia we would call this Museli, but I now reside in North America so I will refer to it as Granola.

Variations on this recipe: Add any other ingredients you want, like other dried fruit, shredded coconut, other spices, bran, wheatgerm, maple syrup, etc. You can also roast the ingredients more or less to make it more or less crunchy.

This recipe makes enough for our 4 person family to last about 7 – 10 days…depending on much, and how often we eat it.

Ingredients
Rolled Oats (Not quick Oats) (4 cups)
Honey (1/3 cup)
Olive Oil (1/3 cup)
