Yeah, you can always go to the store and open can or pouch of soup, but it is never the same as home-made soup. Plus they are usually loaded with preservatives and other junk you really don’t need in your body.
This is a simple soup that my 10 year asked for so we made it together and it turned out great.
Serves: 2 – 3
Ingredients
5 large tomatoes (Chopped)
1 large onion (finely chopped)
10 fresh basil leaves
Salt and Peper to taste
Fresh Tarragon and Rosemary (2 or 3 sprigs each) (optional)
Olive Oil or Butter (2 tbsp)
Heavy Whipping Cream (a splash)(optional)
Instructions
In a large pot, fry onions in olive oil until lightly browned. Add chopped tomatoes, tarragon and rosemary (optional), and salt and pepper.
Simmer on low heat for 30 minutes.
Take off heat and let cool to a temperate that is warm enough to eat.
In a blender or food processor, blend the basil leaves first and then add the ingredients from the pot to blend in with the basil.
To serve pour in to a bowl, add a splash of cream and stir it in (optional).
